"The best wine is one to enjoy and share"
Alberto Rodríguez, sommelier at En la Parra
If there is one thing that characterises the restaurant En la Parra, it is undoubtedly its meticulous selection of every product it offers. Perhaps that is why, in its constant pursuit of excellence, this restaurant has held a Michelin Star since 2021. This principle applies equally to its cuisine and its wine cellar, which is led by Alberto Rodríguez, Sommelier and Maître d' of the restaurant. Alberto Rodríguez began his professional career at the hospitality school in Gijón and specialised in the wine world at the Spanish School of Tasting in Madrid. He continued his training at the Parador School of León, which enabled him to serve as sommelier at the Parador de San Marcos. He later made his professional leap to restaurant Cocinandos (Michelin Star), from which he gained the momentum to take on his most ambitious project: En la Parra. With his unique vision and pairings, Alberto has curated a selection of some 300 wines for his diners, carefully chosen from mostly small producers. His cellar is a living, breathing entity that evolves with each season and each new discovery. Your beginnings in the world of wine "I have always been curious about everything related to gastronomy, and wine is an essential part of the dining experience. During my training in Gijón I began to appreciate how a good wine can transform a meal." Wine selection philosophy "We look for wines with personality, from producers who work with respect for the land. We favour small wineries that offer something authentic and different. Each wine on our list must tell a story." Advice for wine lovers "My advice is simple: uncork, taste, share. The best wine is the one you enjoy with good company. Don't be afraid to try new things — every bottle is an opportunity to discover something wonderful." The role of the sommelier "A sommelier must be a bridge between the winery and the diner. Our job is to listen, understand preferences and guide without imposing. A good pairing elevates both the dish and the wine." Wines from different regions "Spain has an incredible diversity of terroirs and grape varieties. We participate in tastings across different regions to keep discovering gems that surprise our guests."
