With solid training that includes a diploma from the Spanish School of Sommeliers and studies in viticulture and oenology, Xavi has earned distinctions from the prestigious WSET programme in London and is an accredited educator for Sherry Wine and Cava. Throughout his prolific career, Xavi has worked in renowned wineries in Priorat and Penedés and has been brand ambassador for prestigious names like Grupo Codorniu and Champagne Laurenti. His experience extends beyond production and tasting — he has also left a significant mark in education as founder of enoAula, an innovative platform offering courses and seminars for both enthusiasts and industry professionals. Xavi is also the creator of the project "Vins de la Memòria", which seeks to rescue and preserve historical memory through wine, using ancestral methods and forgotten grape varieties. What sparked your passion for wine? It began with my first job in a restaurant. The cellar fascinated me — each bottle held a story, a landscape, a tradition. The enoAula project enoAula was born from the need to democratise wine education. We offer courses for all levels, from curious beginners to professionals seeking specialisation. The goal is to make wine accessible and enjoyable. Vins de la Memòria This project is very personal. We recover pre-phylloxera varieties and ancestral techniques to create wines that connect us with our viticultural heritage. It is a way of preserving history in every bottle. Digital vs traditional wine lists The opportunity Winerim proposes — not just digitising the list, but having exhaustive control of all your references, ordered and categorised — is a tremendous advance. Winerim gave me the definitive click towards digital wine lists. It helps me save time creating lists, offers a clearer structure, and provides an ally for waiters in wine sales.
