Useful uses
Winemaking
Fermentation of the grapes (Tinta Negra, the most widely planted, and the noble white varieties Sercial, Verdelho, Bual and Malmsey) is stopped by fortification at 17–22%. Ageing in estufas (tanks heated to 45–50 °C) or in casks in sun-warmed lofts (canteiro). The heat accelerates oxidation and ageing. Minimum ageing of 3 years, but many wines spend 10–100+ years.
