Pedro Ximénez (PX)

Sweet fortified wine made from sun-dried grapes. Dense as syrup, with notes of figs, chocolate and dates.

PX is concentrated decadence. Pedro Ximénez grapes dried under the Andalusian sun until they turn into raisins, an arrested fermentation, fortification. The result: a wine that is almost dessert in a bottle.

Winemaking

Pedro Ximénez grapes are dried in the sun (raisining) for 2–3 weeks. They lose around half of their weight, mostly water. Very brief fermentation (the extremely high sugar concentration holds back the yeasts). Fortification to 15% stops fermentation completely. The wine retains more than 212 g/L of residual sugar (the DO minimum), often 400 g/L or more.
