Tawny Port
Port aged in wood with slow oxidation; age-indicated Tawnies spend many years in cask. Amber, sweet and silky, with notes of nuts and caramel.
Tawny is the evolution. Years in wooden casks (pipes), slow exposure to air, evaporation. The result: nutty complexity, caramel, refinement.

Useful uses
Winemaking
Oxidative ageing in pipes, wooden casks smaller than the large vats or tanks in which Ruby is aged. Slow oxidation: oxygen enters little by little through the wood and during racking. Annual evaporation (the angels' share). Wines of different ages are blended for consistency. Age statements on the label, such as 10, 20, 30 or 40 years, express the style of a Tawny of that age, as approved by the IVDP tasting panel.
