Manto Negro

Also known as: Mantonegro

A native Mallorcan red grape and the main variety of the Binissalem DO: lightly coloured reds with ripe red fruit, soft tannins and a Mediterranean accent.

Manto Negro is a red variety native to Mallorca and the emblematic red grape of the Binissalem DO, where it is the main variety in its red wines. It is also grown in the Pla i Llevant DO and elsewhere on the island under the Vi de la Terra Mallorca PGI. It usually gives wines with generous alcohol but light colour, soft tannins and moderate acidity. It is often blended with Callet, another Mallorcan red grape, or with grapes such as Cabernet Sauvignon, Syrah or Merlot, which add colour and structure, although it is also made as a single-varietal red and as a rosé.

Winerim view

How it is perceived on the list

Wine-list perception

Almost unknown outside the Balearic Islands, but its Mallorcan origin sparks curiosity. In restaurants on the islands it works as a wine of identity and suits visitors looking for 'the local grape'.

When it helps sell

When the wine list wants a section of island wines or of Spanish native varieties beyond the usual ones. It also lets you offer a soft, low-tannin red that is easy to recommend with Mediterranean cooking.

Guest profile

Travellers who have been to Mallorca or who look for local wines when visiting the islands. Also the curious guest who prefers gentle reds with soft tannins to more structured ones.

Best sales angle

Sell it on origin: 'the main red grape of Binissalem, native to Mallorca'. Describing it as a soft red with red fruit and a Mediterranean background helps reassure guests who are wary of an unfamiliar wine.

When to highlight the grape

In restaurants in the Balearic Islands or on lists with a section devoted to islands and native varieties. On other lists it works better as a by-the-glass recommendation or in a discoveries section.

How to use Manto Negro on a real wine list

A quick operating read to turn Manto Negro into buying, recommendation and library navigation.

Guest reading

Manto Negro should read as a familiar variety, a discovery or an origin argument. That role decides its visual weight.

Floor cue

Summarize Manto Negro through texture, acidity, origin or dish. If the explanation takes longer than the decision, the sale weakens.

List role

Connect Manto Negro with regions, styles and pairings so it does not become an isolated entry.

Compare it with one safe alternative and one differentiating option before listing it by the glass or bottle.

Common mistakes

Expecting a deeply coloured, heavily structured red: its colour is naturally light and its tannins are soft.
Serving it too warm: its alcohol is usually generous and, at a high temperature, it can feel heavy.
Not explaining the origin: without the reference to Mallorca and Binissalem, the name means nothing to the guest.

Suggested pairings

Sobrasada and cured meats
Frito mallorquín
Rice dishes with meat
Roast lamb
Semi-cured cheeses
