Ribolla Gialla

Also known as: Rebula, Ribolla

A traditional white grape of Friuli and Slovenia's Brda, where it is called Rebula: fresh, high-acid whites, sparkling wines and long skin-contact orange wines.

Ribolla Gialla is a traditional white variety from the border area between Italian Friuli and Slovenian Brda, where it is known as Rebula. It has thick skins and high acidity, which allow it to make very different styles: young, fresh and light whites, sparkling wines and wines macerated on their skins for long periods. In Collio and Goriška Brda it is one of the key grapes of the orange wine movement, sometimes fermented in amphorae. Its aromatic profile is discreet, and its appeal lies in texture and freshness.

How it is perceived on the list

Wine-list perception

It is little known outside Italy and Slovenia, but the name is attractive and easy to remember. Among orange wine fans it tends to spark a lot of interest.

When it helps sell

When the list wants to offer a high-acid white that differs from the usual ones, or a section of skin-contact wines. It also works as an alternative sparkling wine for the aperitif.

Guest profile

Curious guests looking for fresh, not very aromatic whites beyond the usual varieties. And, in its skin-contact versions, fans of orange wines and low-intervention wines.

Best sales angle

Sell it on style rather than name: always make clear whether it is a fresh white, a sparkling wine or an orange wine. For the skin-contact versions, the story of the Friuli–Slovenia border and the use of amphorae help tell it.

When to highlight the grape

On lists with a section for orange wines or for wines from Italy and Slovenia, and in restaurants with a sommelier who can explain the style at the table.

Common mistakes

Not stating the style on the list: a young white and a skin-contact wine are opposite experiences.
Serving skin-contact versions too cold: cold hardens the tannin and mutes the aromas.
Assuming every Ribolla Gialla is an orange wine: many versions are fresh, light whites or sparkling wines.

Suggested pairings

Cured ham
Vegetable risotto
Semi-hard cheeses
