Verdicchio

Also known as: Verdicchio Bianco, Trebbiano di Soave

The emblematic white grape of Marche, on Italy's Adriatic coast: wines with lively acidity, citrus notes, a bitter-almond finish and good ageing potential at their best.

Verdicchio is the most representative white variety of Marche, on the Adriatic coast of central Italy. Its two benchmark appellations are Verdicchio dei Castelli di Jesi, on hills closer to the sea, and Verdicchio di Matelica, in a higher, more continental inland valley. It mainly makes dry, high-acid whites with citrus, green apple, herbs and a characteristic bitter-almond finish, and the best age well in bottle. It is also made as a sparkling wine and, to a lesser extent, as a sweet passito.

How it is perceived on the list

Wine-list perception

Many guests have heard the name as an Italian wine, though few could describe it. It comes across as a serious, fresh Italian white and is often seen as good value for money.

When it helps sell

It fills the slot of a fresh, food-friendly Italian white with more tension than a Pinot Grigio. By the glass it is useful for fish, shellfish and olive-oil-based cooking, and Riserva versions can take a higher tier on the wine list.

Guest profile

Guests who ask for a dry, fresh white with character, or who enjoy Italian wines beyond the best-known names. Also fans of high-acid whites such as Albariño or Assyrtiko.

Best sales angle

Sell it as 'the white of Marche, on the Adriatic': fresh, citrusy and with an almond finish that calls for food. With Albariño drinkers, the comparison on freshness works as a bridge.

When to highlight the grape

In Italian restaurants, seafood restaurants or venues with a wide by-the-glass offer, where it can be the reference Italian white alongside Pinot Grigio.

How to use Verdicchio on a real wine list

A quick operating read to turn Verdicchio into buying, recommendation and library navigation.

Guest reading

Verdicchio should read as a familiar variety, a discovery or an origin argument. That role decides its visual weight.

Floor cue

Summarize Verdicchio through texture, acidity, origin or dish. If the explanation takes longer than the decision, the sale weakens.

List role

Connect Verdicchio with regions, styles and pairings so it does not become an isolated entry.

Compare it with one safe alternative and one differentiating option before listing it by the glass or bottle.

Common mistakes

Selling it only as a simple aperitif white: Riserva versions and those from the best vintages have structure and ageing potential.
Not stating the appellation: Castelli di Jesi and Matelica give different styles, and guests appreciate knowing where the wine comes from.
Confusing Trebbiano di Soave, which is Verdicchio, with Trebbiano Toscano: they are different varieties despite the name.

Suggested pairings

Fish brodetto
Olive all'ascolana
Spaghetti with clams
Fried fish
Salt-baked white fish
