Manzanilla de Sanlúcar

Appellation of Sanlúcar de Barrameda (Cádiz) devoted to manzanilla, a fortified Palomino Fino wine aged under a veil of flor: dry, light and markedly saline in character.

Manzanilla de Sanlúcar covers the wines aged in the bodegas of Sanlúcar de Barrameda, at the mouth of the Guadalquivir in the province of Cádiz. It is made from Palomino Fino, largely from vineyards on albariza soils, and aged in a criaderas and solera system under a veil of flor. The town's humidity and Atlantic influence help keep the flor active, producing a dry, pale, light and saline wine. Alongside classic manzanilla there are manzanilla en rama and manzanilla pasada, which has a longer ageing.

What it signals on a wine list

Wine-list perception

On the wine list it usually works best in a fortified or aperitif section, noting that it is a dry wine aged under a veil of flor. It is worth making clear that it is not a sweet wine, as some guests confuse it with other fortified wines.

When to highlight it

It is a natural by-the-glass choice at the start of a meal and with fried food, shellfish and salty tapas. It also suits summer menus and bars serving aperitifs.

Guest profile

It appeals to guests who know sherry and to those looking for a dry, fresh aperitif. Many guests recognise the name even if they do not know how it is made.

Best sales angle

It sells well as an aperitif by the glass, well chilled and served with a salty tapa. Suggesting it with fried fish or shellfish often wins over guests who have never tried it.
