Txakolí

Also known as: Txakoli, Getariako Txakolina, Bizkaiko Txakolina

The wine of the Basque Country: fresh, high in acidity, lightly sparkling and perfect with pintxos and Basque cuisine.

Txakoli is the Basque Country's signature wine. Made mainly from Hondarrabi Zuri, it produces whites with vibrant acidity, a light natural spritz and a profile that is the pure expression of the Cantabrian coast. Traditionally a simple cider-house wine, Txakoli has evolved enormously: today some producers make single-plot, aged whites that rival any Spanish white in complexity.

Winerim view

What it signals on a wine list

Wine-list perception

Txakoli signals the Basque Country, extreme freshness and authenticity. In a Basque restaurant it is a must. Outside the Basque Country, it adds differentiation and surprises guests.

When to highlight it

Essential in Basque restaurants. On any wine list it works as an aperitif, with shellfish and with pintxos. The aged versions compete as a food-driven white.

Guest profile

Very well known in the Basque Country. Growing in the rest of Spain. Food tourists actively seek it out.

Best sales angle

It sells through the experience (the ritual of pouring from a height). By appellation in a Basque context. Through curiosity and staff recommendation outside the Basque Country.

Common mistakes

Serving it too cold: at 8-10°C the aromas show best
Not exploring aged txakolis and those from Bizkaia and Álava, whose profiles differ from Getaria
Treating Txakoli as a summer-only wine: it works all year round with the right food

Suggested pairings

Pintxos
Cantabrian anchovies
Kokotxas (hake throats)
Txangurro (Basque spider crab)
Bacalao al pil-pil (salt cod in pil-pil sauce)
Young Idiazábal cheese
