Clairette

Also known as: Clairette Blanche

White grape from southern France, from Languedoc, the Rhône and Provence, that makes floral, rounded, low-acid whites and is part of many Mediterranean blends.

Clairette is a traditional white variety of southern France, found in Languedoc, the Rhône Valley and Provence. It has its own appellation, Clairette du Languedoc, is one of the permitted grapes in white Côtes du Rhône and Châteauneuf-du-Pape, and is one of the main grapes of white Cassis. It makes rounded, low-acid wines with discreet floral and white-fruit aromas, and it oxidises easily, so most are drunk young. In the Diois (Drôme) it is used for sparkling wines: it is the base of Crémant de Die, while traditional Clairette de Die is made mainly from Muscat.

Winerim view

How it is perceived on the list

Wine-list perception

As a variety it is almost unknown to guests, and the name is mainly associated with sparkling Clairette de Die. On the list it works better as part of a story about the whites of southern France than as a draw on its own.

When it helps sell

It helps build a section of Mediterranean French whites beyond Viognier or Chardonnay, and adds authenticity in restaurants with Provençal or Languedoc cooking. It also helps explain the white blends of the Rhône.

Guest profile

Fans of southern French or Rhône wines who already know Marsanne, Roussanne or Grenache Blanc. Also guests looking for soft, low-acid whites with a floral profile.

Best sales angle

Present it by origin and role: 'a historic white grape of southern France, floral and rounded, found in many Rhône and Provence whites'. With Mediterranean fish dishes, the story of Cassis or Provence helps sell it.

When to highlight the grape

On wine lists with a broad French or Rhône section, and in Provençal or Mediterranean restaurants where the wine's origin is part of the story.

How to use Clairette on a real wine list

A quick operating read to turn Clairette into buying, recommendation and library navigation.

Guest reading

Clairette should read as a familiar variety, a discovery or an origin argument. That role decides its visual weight.

Floor cue

Summarize Clairette through texture, acidity, origin or dish. If the explanation takes longer than the decision, the sale weakens.

List role

Connect Clairette with regions, styles and pairings so it does not become an isolated entry.

Compare it with one safe alternative and one differentiating option before listing it by the glass or bottle.

Common mistakes

Assuming Clairette de Die is a Clairette wine: the traditional version is made mainly from Muscat.
Keeping it too long: it oxidises easily and most versions are drunk young.
Selling it as a white with lively acidity: its profile is rounded and soft, and it is worth explaining this to guests.

Suggested pairings

Bouillabaisse
Brandade de morue
Baked white fish
Roast vegetables with Provençal herbs
Fresh goat's cheese
