Picolit
A historic white grape from Friuli, very scarce because of its poor fruit set, used almost always for delicate, floral sweet wines from overripe or dried grapes.
Picolit is a historic white variety from Friuli, in north-eastern Italy, grown mainly in the hills of the Colli Orientali. The vine suffers from partial flower abortion: many flowers fail to set and the bunches end up with few berries, which explains its very low yields and its scarcity. It is almost always used for sweet wines, made from grapes left to overripen on the vine or dried after harvest. The result is delicate, floral sweet wines, more refined than opulent, and the Colli Orientali area has its own DOCG for this wine.

How it is perceived on the list
Wine-list perception
The name is unknown to most guests, except for people who know Italian wine well. Its scarcity and history give it an air of rarity that suits the dessert wine section.
When it helps sell
When the dessert wine list wants something different from the more usual Sauternes, Tokaji or Pedro Ximénez. It also rounds out the regional offer of Italian restaurants with a sweet wine from the north-east.
Guest profile
Dessert wine lovers who look for rarities and prefer delicate profiles to concentrated ones. Also guests at Italian restaurants who are interested in regional specialities.
Best sales angle
Sell it on rarity and style: a delicate sweet wine from Friuli, made from a grape that yields very little fruit. Offering it by the glass in small pours makes it easier for guests to try it without ordering the bottle.
When to highlight the grape
On lists with a carefully curated dessert wine section and in upscale Italian restaurants, where the sommelier can tell its story at the table.

Guest reading

Floor cue
Summarize Picolit through texture, acidity, origin or dish. If the explanation takes longer than the decision, the sale weakens.
